Brigadeiros (Brazilian chocolate fudge truffles)

Last year I went to São Paulo for work and it didn’t take me long to fall in love with Brazilians: with their way of speaking, their amazing food and their cheerfulness (and yes, they are also very sexy on average).

Next to my hotel in the neighbourhood of Pinheiros, there was “Maria Brigadeiro“, an amazing small shop full of brigadeiros, the chocolate fudge truffles that are very popular in Brazil. That shop was selling brigadeiros like macarons are sold in France, which means 1) with many different flavours and decorations, and 2) at quite a high price. 🙂

Life is short, start with the dessert

That was the writing on the wall of the shop, where of course I bought more than a dozen different brigadeiros. They all tasted amazing, but the best ones were the traditional flavours, simply made with chocolate and condensed milk.

And that’s exactly the recipe I made in these days, to celebrate the Olympics in Brazil: simple chocolate brigadeiros.

The recipe is very easy, but you need to know when to stop stirring… that might take some practice! But trust me, it is very hard to fail at making brigadeiros!

Serve them at room temperature for an explosion of super-soft chocolate in your mouth! Bom apetite! 🙂

 

Brigadeiros

Ingredients

450gCondensed milk
15gUnsalted butter
150gChocolate powder (or finely chopped milk or dark chocolate)
100gChocolate sprinkles

Directions

Place the condensed milk and butter in a (possibly non-stick) pan on medium-low heat

Keep on stirring with a rubber spatula and when the mixture is lukewarm add the chocolate

Cook and stir continuously for around 10 minutes until the brigadeiro mixture thickens and starts sliding away from the bottom of the saucepan or from the spatula

Refrigerate for at least six hours, then take a small amount of mixture with your hands and form a small ball. Hint: some people say it helps to wet your hands in cold water. Although it didn't work for me, for sure I had to wash my hands very often.

Roll the brigradeiros in a bowl of chocolate sprinkles to cover them completely.

Place into small paper cups and serve at room temperature.

Note

The brigadeiros can be stored at room temperature in an airtight container for around 3 days, or around 7 days if refrigerated. Just remember to serve them at room temperature.

    Hi ROB. Hello from brazil. Brigadeiros are wonderful and you can make them with any flavor. When you roll them i like to use a bit of butter or margarine on my hands. You may also use margarine in place of butter. And if you like use more butter than your recipe. If you ever want to make white brigadeiros, after step 3 add mlk powder, please not before, it will burn. Loved your blog FANTASTIC!!!!!!!
