Traditional chocolate mousse (Mousse à l’ancienne)

Print recipe

Ingredients

100gMilk chocolate
150Bittersweet chocolate
5Eggs
50gUnsalted or salted butter
100gWhipped cream (optional)

Directions

Note

Personally I prefer a mousse that melts in your mouth even though it is not very light and airy: to achieve this, I skip the last step and never add whipped cream. For a lighter mousse, add whipped cream according to your taste: even 20 grams might be fine, rather than 100!

Suggestion: a real flavour booster is salted butter, trust me! It's amazing! 🙂
