{"id":82,"date":"2011-12-20T22:53:03","date_gmt":"2011-12-20T21:53:03","guid":{"rendered":"http:\/\/www.roadtopastry.com\/blog\/?p=82"},"modified":"2012-12-04T23:12:56","modified_gmt":"2012-12-04T22:12:56","slug":"the-best-christmas-cake-in-saint-jean-cap-ferrat","status":"publish","type":"post","link":"https:\/\/www.roadtopastry.com\/blog\/events\/the-best-christmas-cake-in-saint-jean-cap-ferrat","title":{"rendered":"Competition: The best Christmas cake in Saint-Jean Cap Ferrat"},"content":{"rendered":"<p>Et voil\u00e0, after 2 weeks of experiments, I came out with my cake for the <strong>Christmas competition at Saint-Jean Cap Ferrat<\/strong>, a small town on a dreamy peninsula not far from Nice.<\/p>\n<p><a href=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/St-Jean-Cap-Ferrat.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-87\" title=\"St Jean Cap Ferrat\" src=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/St-Jean-Cap-Ferrat.jpg\" alt=\"\" width=\"960\" height=\"717\" srcset=\"https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/St-Jean-Cap-Ferrat.jpg 960w, https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/St-Jean-Cap-Ferrat-300x224.jpg 300w\" sizes=\"auto, (max-width: 960px) 100vw, 960px\" \/><\/a><em>(fake snow of course, that day was cold but until the day before there were 18\u00b0C, a bit hot for snow)<\/em><\/p>\n<p>The city is now famous for his landscape and <strong>amazing coasts<\/strong>, but also because it is <strong>one of the richest towns in France<\/strong>, since many millionaires (the Rothschild baroness was just one of them) have decided to live or spend their holidays there.<\/p>\n<p>The competition had <strong>strict rules<\/strong>: participants had to present a <strong>home-made cake<\/strong> by using <strong>any of the ingredients proposed in a list<\/strong>. Complying with this limitation was tough, since vital pastry ingredients like <strong>cream<\/strong> were <strong>not allowed<\/strong>.<\/p>\n<p>Moreover, it was <strong>mandatory to use some or all the components of the &#8220;<a href=\"http:\/\/en.wikipedia.org\/wiki\/Thirteen_desserts\">treize desserts proven\u00e7als<\/a>&#8220;<\/strong> (Thirteen desserts of Provence), a historical tradition, different in each family, which usually includes:<\/p>\n<ul>\n<li><em>Raisins or grapes<\/em><\/li>\n<li><em>Walnuts or hazelnuts<\/em><\/li>\n<li><em>Dried figs<\/em><\/li>\n<li><em>Almonds<\/em><\/li>\n<li><em>Dates<\/em><\/li>\n<li><em>Dried plums<\/em><\/li>\n<li><em>Apples<\/em><\/li>\n<li><em>Pears<\/em><\/li>\n<li><em>Oranges<\/em><\/li>\n<li><em>Winter melon<\/em><\/li>\n<li><em>Tangerines<\/em><\/li>\n<li><em>Nougat<\/em><\/li>\n<\/ul>\n<p>After some thinking, I drew <strong>the layers of my cake<\/strong> (from the bottom):<\/p>\n<ul>\n<li>Hazelnut dacquoise<\/li>\n<li>Hazelnut pralin\u00e9<\/li>\n<li>Chocolate spongecake<\/li>\n<li>Tangerine pastry cream<\/li>\n<li>2nd layer of chocolate spongecake<\/li>\n<li>Date pastry cream<\/li>\n<li>3rd layer of chocolate spongecake<\/li>\n<li>Chocolate ganache (with milk only) to cover<\/li>\n<li>Caramel decorations and one macaron on top<\/li>\n<\/ul>\n<p><a href=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Preparation-cake-with-dates-and-tangerines.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-88\" title=\"Preparation cake with dates and tangerines\" src=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Preparation-cake-with-dates-and-tangerines.jpg\" alt=\"\" width=\"960\" height=\"717\" srcset=\"https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Preparation-cake-with-dates-and-tangerines.jpg 960w, https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Preparation-cake-with-dates-and-tangerines-300x224.jpg 300w\" sizes=\"auto, (max-width: 960px) 100vw, 960px\" \/><\/a>Despite the mess in my kitchen, <strong>I was really happy with the cake <\/strong>and proudly brought my creation to the contest tent in Saint-Jean Cap Ferrat (the road full of uphill climbs didn&#8217;t relax me at all since any small rough movement could have destroyed my g\u00e2teau).<\/p>\n<p><a href=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/St-Jean-Cap-Ferrat-Contest-Competitors.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-90\" title=\"St Jean Cap Ferrat Contest - Competitors\" src=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/St-Jean-Cap-Ferrat-Contest-Competitors.jpg\" alt=\"\" width=\"960\" height=\"717\" srcset=\"https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/St-Jean-Cap-Ferrat-Contest-Competitors.jpg 960w, https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/St-Jean-Cap-Ferrat-Contest-Competitors-300x224.jpg 300w\" sizes=\"auto, (max-width: 960px) 100vw, 960px\" \/><\/a>Nothing bad happened luckily, and this was the result:<\/p>\n<p><a href=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/St-Jean-Cap-Ferrat-Contest-My-cake.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-92\" title=\"St Jean Cap Ferrat Contest - My cake\" src=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/St-Jean-Cap-Ferrat-Contest-My-cake.jpg\" alt=\"\" width=\"960\" height=\"717\" srcset=\"https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/St-Jean-Cap-Ferrat-Contest-My-cake.jpg 960w, https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/St-Jean-Cap-Ferrat-Contest-My-cake-300x224.jpg 300w\" sizes=\"auto, (max-width: 960px) 100vw, 960px\" \/><\/a>As soon as I saw the other cakes, I realized that probably I was the only one who respected the rules about the ingredients, and hoped that judges would consider that. One of the competitors was &#8220;<strong>Santa&#8217;s sledge<\/strong>&#8220;:<\/p>\n<p><a href=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/St-Jean-Cap-Ferrat-Contest-Competitor1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-86\" title=\"St Jean Cap Ferrat Contest - Competitor1\" src=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/St-Jean-Cap-Ferrat-Contest-Competitor1.jpg\" alt=\"\" width=\"960\" height=\"717\" srcset=\"https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/St-Jean-Cap-Ferrat-Contest-Competitor1.jpg 960w, https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/St-Jean-Cap-Ferrat-Contest-Competitor1-300x224.jpg 300w\" sizes=\"auto, (max-width: 960px) 100vw, 960px\" \/><\/a>Definitely <strong>eye-catching<\/strong>, but not my style of cake. Plus, it was really <strong>funny<\/strong> when one of the organizers tried to cut the white part which served as a base for the sledge and the owner of the cake shouted: &#8220;No no, <strong>that part is made of cardboard!!!<\/strong>&#8221; :-O<\/p>\n<p>After several hours of freezing in the main square of Saint-Jean Cap Ferrat, finally the judges announced the results:<\/p>\n<p>&#8211; <strong>First prize<\/strong> for the b\u00fbche de No\u00ebl aux marrons (<strong>Chestnut Christmas log<\/strong>)<\/p>\n<p><a href=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/St-Jean-Cap-Ferrat-Contest-Competitor2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-89\" title=\"St Jean Cap Ferrat Contest - Competitor2\" src=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/St-Jean-Cap-Ferrat-Contest-Competitor2.jpg\" alt=\"\" width=\"717\" height=\"960\" srcset=\"https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/St-Jean-Cap-Ferrat-Contest-Competitor2.jpg 717w, https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/St-Jean-Cap-Ferrat-Contest-Competitor2-224x300.jpg 224w, https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/St-Jean-Cap-Ferrat-Contest-Competitor2-300x401.jpg 300w\" sizes=\"auto, (max-width: 717px) 100vw, 717px\" \/><\/a><\/p>\n<p>&#8211; <strong>Second place<\/strong> for the decorated house filled with fromage blanc and passion fruit:<\/p>\n<p><a href=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/St-Jean-Cap-Ferrat-Contest-Competitor3.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-98\" title=\"St-Jean-Cap-Ferrat-Contest---Competitor3\" src=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/St-Jean-Cap-Ferrat-Contest-Competitor3.jpg\" alt=\"\" width=\"717\" height=\"960\" srcset=\"https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/St-Jean-Cap-Ferrat-Contest-Competitor3.jpg 717w, https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/St-Jean-Cap-Ferrat-Contest-Competitor3-224x300.jpg 224w, https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/St-Jean-Cap-Ferrat-Contest-Competitor3-300x401.jpg 300w\" sizes=\"auto, (max-width: 717px) 100vw, 717px\" \/><\/a><\/p>\n<p>Ok, once again, <strong>not at all my style of cake<\/strong>, but it ranked better than mine. It is enough to piss me off \ud83d\ude1b But let&#8217;s keep it cool and let&#8217;s accept&#8230; the <strong>third prize<\/strong>!!! \ud83d\ude00<\/p>\n<p>Apparently, according to the jury, <strong>my cake was not decorated enough<\/strong>, but in the end I think it is amazing that <strong>I was able to win something<\/strong> in a pastry competition, <strong>after just 6 months\u00a0 of practice<\/strong>! It just motivates me to go on&#8230;<\/p>\n<p>And <strong>the prize is cool<\/strong> as well: a pastry course with\u00a0<a href=\"http:\/\/www.patisseries-lac.com\/\" target=\"_blank\">Pascal Lac<\/a>, the best pastry chef in Nice!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Et voil\u00e0, after 2 weeks of experiments, I came out with my cake for the Christmas competition at Saint-Jean Cap Ferrat, a small town on a dreamy peninsula not far from Nice.
