(And the final result is also much more stable and with a great texture!)<\/p>\n<p>To make a p\u00e2te \u00e0 bombe, the process is <strong>similar to that of an Italian meringue<\/strong>: start <strong>whipping the egg yolks at high speed<\/strong>; in the meantime prepare a <strong>syrup with sugar and water<\/strong> and bring to a boil. When the syrup reaches a <strong>temperature between 115\u00b0C and 121\u00b0C<\/strong> you can pour it over the egg yolks and whip until the mixture is room temperature.<\/p>\n<p><a href=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/2016\/11\/Chocolate-mousse-recipe-5.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-7198\"
