I was abroad for work for around 20 days, went to\u00a0a wedding in Italy and then my parents visited me here in Cannes.<\/p>\n<p>Very little or no time for baking, but I was able to make something for my parents\u00a0last weekend. You must know that <em>they are very used to Italian pastry<\/em>, which in my humble opinion is a bit stuck in the 70&#8217;s: an abundance of whipped cream, <em>Maraschino-soaked spongecakes<\/em> and too often\u00a0that <em>chemical-red candied cherry on top<\/em>.<\/p>\n<p>So whenever they taste\u00a0my typically French\u00a0creations, they are turned off by the important amount and strong taste of butter and by the lack of a &#8220;light&#8221; whipped cream (they say all my cakes are heavy!). The only cake they &#8220;accept&#8221; from me is a spongecake with pastry cream and red fruits. The most basic\u00a0of the basics! Boring! It would include Maraschino too, but that&#8217;s too much, I cannot handle it! Years ago\u00a0I made a <a href=\"http:\/\/www.roadtopastry.com\/blog\/recipes\/cakes\/fraisier-creamy-strawberry-cake\">fraisier<\/a>, but this year I tried for the first time a <strong>framboisier<\/strong>, a <strong>raspberry-filled cake<\/strong> with a vanilla\u00a0<strong>mousseline cream<\/strong> (read: &#8220;lots of butter&#8221;).<\/p>\n<p><a href=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/2016\/06\/Recipe-Framboisier13.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-6788\" src=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/2016\/06\/Recipe-Framboisier13.jpg\" alt=\"Recipe-Framboisier13\" width=\"1024\" height=\"683\" srcset=\"https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/2016\/06\/Recipe-Framboisier13.jpg 1024w, https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/2016\/06\/Recipe-Framboisier13-300x200.jpg 300w, https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/2016\/06\/Recipe-Framboisier13-600x400.jpg 600w, https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/2016\/06\/Recipe-Framboisier13-400x267.jpg 400w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p><strong>Nothing too complicated<\/strong> with this recipe: I just had a problem when I removed the acetate strip because it removed part of the spongecake too! And it&#8217;s a nice, simple technique to know, anyway (see below for details).<\/p>\n<p>So, how was this cake? Very good, fresh and summery. Did my parents like it?
