So yeah, all this was to justify why I&#8217;m posting a bit less on the blog, but I&#8217;m as excited as usual about sharing my lovely recipes and photos&#8230; especially now that I&#8217;ve <strong>reached the great milestone of 1.000 likes on Facebook<\/strong>! (You&#8217;re not following me yet? Do you have any valid reason? If not, just <a href=\"http:\/\/www.facebook.com\/RoadToPastry\">go on Fb and like my page<\/a>! Now!).<\/p>\n<p>I know that summer should be all about fresh fruit tarts and light creams, but I had some <strong>leftover egg whites<\/strong> and decided to try this <strong>recipe<\/strong> for <strong>S-shaped cocoa\u00a0biscuits<\/strong> which are rich in\u00a0not-so-summery <strong>butter<\/strong>.<\/p>\n<p><a href=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-S-shaped-chocolate-biscuits15.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-5351\" src=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-S-shaped-chocolate-biscuits15.jpg\" alt=\"Recipe-S-shaped-chocolate-biscuits15\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-S-shaped-chocolate-biscuits15.jpg 640w, https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-S-shaped-chocolate-biscuits15-300x200.jpg 300w, https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-S-shaped-chocolate-biscuits15-600x400.jpg 600w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><\/p>\n<p>This recipe by <strong>Italian pastry chef Iginio Massari<\/strong> is very interesting because it can be considered a <strong>variation of a <a href=\"http:\/\/www.roadtopastry.com\/blog\/recipes\/tarts\/recipe-strawberry-tart-with-pastry-cream\">shortbread tart dough<\/a><\/strong>, but in this case the <strong>butter is creamed<\/strong> to obtain an airy, flaky dough and the <strong>egg whites are used instead of whole eggs or egg yolks<\/strong>.<\/p>\n<p><a href=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-S-shaped-chocolate-biscuits17.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-5345\" src=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-S-shaped-chocolate-biscuits09.jpg\" alt=\"Recipe-S-shaped-chocolate-biscuits09\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-S-shaped-chocolate-biscuits09.jpg 640w, https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-S-shaped-chocolate-biscuits09-300x200.jpg 300w, https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-S-shaped-chocolate-biscuits09-600x400.jpg 600w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><\/p>\n<p>Finally, the <strong>biscuits have to be piped<\/strong>, baked and then <strong>dipped in tempered milk chocolate<\/strong>. This was my <strong>first successful attempt<\/strong> at tempering chocolate with the <strong>seeding method<\/strong> (you find the details in this recipe, but I&#8217;m going to write a separate article for a full explanation). For this reason I was ecstatic, until I tasted the biscuits and became even more <strong>ecstatic<\/strong> because they are <strong>absolutely fantastic<\/strong>!<\/p>\n<p><img loading=\"lazy\" <strong>best texture<\/strong> I have ever found in biscuits, and the <strong>crunchy milk chocolate<\/strong> on the outside is <strong>just perfect<\/strong> (<em>of course it&#8217;s crunchy only recommend these biscuits<\/strong> and they are <strong>perfect for tea time<\/strong>, although now that it&#8217;s 40<b>\u00b0<\/b>C outside, I don&#8217;t bother making tea and I just eat them one
