The custard is usually of a neutral flavour, but I added\u00a0a bit of vanilla just because I&#8217;m addicted to it; the baked tarts, though, are served with <strong>sprinkled cinnamon on top<\/strong>.<\/p>\n<p>Of course I used my <strong>home-made <a title=\"Puff pastry \u2013 P\u00e2te feuillet\u00e9e\" href=\"http:\/\/www.roadtopastry.com\/blog\/recipes\/laminated-doughs\/puff-pastry-pate-feuilletee\">puff pastry<\/a><\/strong> for these past\u00e9is, but I admit I <em>haven&#8217;t\u00a0understood\u00a0one step of the recipe yet<\/em>: many books and blogs\u00a0call for regular laminated <strong>puff pastry to be rolled<\/strong> (that would give even more layers) but then crushed to form the tart bases (and this is not a good news for our beautiful layers).<\/p>\n<p><a href=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Pasteis-de-nata-Step03.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-4985\" src=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Pasteis-de-nata-Step03.jpg\" alt=\"Recipe-Pasteis-de-nata-Step03\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Pasteis-de-nata-Step03.jpg 640w, https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Pasteis-de-nata-Step03-300x200.jpg 300w, https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Pasteis-de-nata-Step03-600x400.jpg 600w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><\/p>\n<p>I think the interest of having puff pastry is to have <strong>crunchy and flaky layers<\/strong> as the base of a pastel, but with the most common procedure I found (which is the one explained in this recipe), the result is buttery but not too crunchy nor flaky. Next time I&#8217;ll avoid crushing all the layers to see the difference!<\/p>\n<p><a href=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Pasteis-de-nata-Step08.jpg\"><img versions of these past\u00e9is feature <strong>pastry cream<\/strong> and some a <strong>custard sauce<\/strong> (cr\u00e8me anglaise): I used the latter and the result was excellent for
