My ice cream machine was definitely a good investment since it allows me to make a great dessert any time I want for a very cheap price! <strong>Home-made ice cream<\/strong> is so good I can&#8217;t stop making it, especially in summer! \ud83d\ude42<\/p>\n<p>This is my <strong>first ice cream recipe on this blog<\/strong> and I couldn&#8217;t go more classic: <strong>vanilla ice cream<\/strong>.<\/p>\n<p><a href=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Vanilla-ice-cream-01.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-3930\" src=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Vanilla-ice-cream-01.jpg\" alt=\"Recipe-Vanilla-ice-cream-01\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Vanilla-ice-cream-01.jpg 640w, https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Vanilla-ice-cream-01-300x200.jpg 300w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><\/p>\n<p>Making ice cream is not so different from making a<strong> flavoured custard sauce<\/strong>, but there are a few important ingredients and steps to remember:<\/p>\n<ul>\n<li><strong>Powdered milk<\/strong> is fundamental to add\u00a0creaminess<\/li>\n<li><strong>Glucose<\/strong> or dextrose is needed to prevent crystallisation (otherwise the ice cream will be good the same day, but will become too hard and icy in the following days)<\/li>\n<li>An ice cream <strong>stabiliser<\/strong> is recommendable to keep the final product creamy and soft<\/li>\n<li>The custard must be <strong>chilled quickly<\/strong> after cooking and needs to rest 24 hours in the fridge before churning.<\/li>\n<\/ul>\n<p><em>(Of course, without these &#8220;special&#8221; ingredients, you might achieve a pretty decent result anyway, but it will probably be way\u00a0different\u00a0from artisan ice cream.)<\/em><\/p>\n<p><a href=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Vanilla-ice-cream-05.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-3931\" src=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Vanilla-ice-cream-05.jpg\" alt=\"Recipe-Vanilla-ice-cream-05\" width=\"630\" height=\"420\" srcset=\"https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Vanilla-ice-cream-05.jpg 640w, https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Vanilla-ice-cream-05-300x200.jpg 300w\" sizes=\"auto, (max-width: 630px) 100vw, 630px\" \/><\/a><\/p>\n<p>This recipe, \u00a0inspired by\u00a0<strong>Pierre Herm\u00e9,<\/strong>\u00a0is very rich and creamy. If you want to follow his\u00a0directions, let two\u00a0<strong>vanilla beans steep\u00a0in the milk for one day<\/strong>: as a result the ice cream has a fantastic and <strong>strong vanilla flavour<\/strong> (but for mere mortals like me, steeping the vanilla for 10 minutes gives an amazing result anyway).<\/p>\n<p>This is a <strong>basic recipe<\/strong> which is good for virtually <strong>any kind of ice cream<\/strong>: so unleash your creativity and add some chocolate, pistachio paste, praline paste, tea bags or any other flavour you want!
