The best part is that brioches\u00a0come in <strong>different sizes and shapes<\/strong> and can be <strong>flavoured<\/strong> with sugar, chocolate, pralines or anything you want!<\/p>\n<p><a href=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Brioches01.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-3770\" src=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Brioches01.jpg\" alt=\"Recipe-Brioches01\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Brioches01.jpg 640w, https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Brioches01-300x200.jpg 300w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><\/p>\n<p>In this post you will find the\u00a0<strong>basic recipe<\/strong> of the dough, which can then be used to shape different brioches: <strong>Nanterre brioche, Parisian brioche, Brioche \u00e0 t\u00eate, Swiss brioche, plaited brioche<\/strong> and many more&#8230;<\/p>\n<h3>So how is a brioche made?<\/h3>\n<p>Brioches are made by incorporating soft butter into a thick dough obtained by kneading flour, yeast, sugar, salt and eggs together.<\/p>\n<p><a href=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Brioche13.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-3769\" src=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Brioche13.jpg\" alt=\"Recipe-Brioche13\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Brioche13.jpg 640w, https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Brioche13-300x200.jpg 300w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><\/p>\n<p>It is a very rich and buttery dough: for this reason,<strong>\u00a0brioche must be made with a strong flour<\/strong>. A strong flour will have <strong>stronger gluten strands<\/strong> that are able to <strong>compensate the action of the butter<\/strong> (which loosens gluten strands).<\/p>\n<p>Strong flour have a<strong> high &#8220;W&#8221;<\/strong>, a technical parameter which is usually never mentioned in supermarket flours: as a rule of thumb, you can opt for a <strong>high-protein flour<\/strong>, or bread flour, or, best of all, the so-called <strong>&#8220;Manitoba&#8221; flour<\/strong> <em>(&#8220;farine de gruau&#8221; in French)<\/em>.<\/p>\n<h3>What are the steps to make a brioche?<\/h3>\n<p>Brioche is classified as &#8220;<strong>enriched yeast doughs<\/strong>&#8220;, so it is not different from other doughs that contain yeast. The procedure is the following:<\/p>\n<p><a href=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Enriched-yeast-dough-steps.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-3774\" src=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Enriched-yeast-dough-steps.jpg\" alt=\"Enriched-yeast-dough-steps\" width=\"931\" height=\"90\" srcset=\"https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Enriched-yeast-dough-steps.jpg 931w, https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Enriched-yeast-dough-steps-300x29.jpg 300w\" sizes=\"auto, (max-width: 931px) 100vw, 931px\" \/><\/a><\/p>\n<ol>\n<li><strong>Knead<\/strong> the basic dough<\/li>\n<li>&#8220;<strong>Enrich<\/strong>&#8221; it with the soft butter<\/li>\n<li><strong>Ferment<\/strong> at room temperature until doubled in size (first &#8220;rise&#8221;) for about an hour or 12 hours in the fridge<\/li>\n<li>&#8220;<strong>Punch<\/strong>&#8221; the dough to extract all gases<\/li>\n<li><strong>Portion<\/strong> the dough and form the desired shapes<\/li>\n<li><strong>Proof<\/strong> at room temperature until doubled in size (second &#8220;rise&#8221;) before baking, around 2 hours<\/li>\n<\/ol>\n<p>Only step 1-4 are covered in this basic recipes. The remaining steps will be handled in the specific posts for each type of brioche.<\/p>\n<p><a href=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Brioche11.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-3756\" src=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Brioche11.jpg\" alt=\"Recipe-Brioche11\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Brioche11.jpg 640w, https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Brioche11-300x200.jpg 300w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><\/p>\n<h3>Remarks about temperature<\/h3>\n<p>As you all know by now (because you&#8217;ve read my article on <a title=\"Yeast \u2013 It\u2019s alive!\" href=\"http:\/\/www.roadtopastry.com\/blog\/ingredients\/yeast-its-alive\">yeast<\/a>),\u00a0<strong>temperature<\/strong> (of the ingredients and of the room) <strong>affect the rise<\/strong> of the dough.<\/p>\n<p>To cut a long story short, here a few considerations to keep in mind while working with brioches:<\/p>\n<ul>\n<li>The ingredients should all be at <strong>room temperature<\/strong><\/li>\n<li>The <strong>dough should reach 24\u00b0C<\/strong> at the end of kneading and before fermenting. If it is warmer, store it right away into the freezer for a few minutes, until it reaches 24\u00b0C.<\/li>\n<li>To <strong>accelerate the fermentation<\/strong> (or in case your room is very cold), you can place the dough in a covered bowl inside the oven (make sure it is turned off of course!). You can preheat the oven at 35\u00b0C, but not higher, otherwise the butter will melt.<\/li>\n<li>Usually, &#8220;room temperature&#8221; means around 22\u00b0C. <strong>In summer, the fermentation will be faster<\/strong>, and in winter it will be slower. In any case, there should <strong>never be any current of air<\/strong> during the fermentation and proofing phases.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<div class=\"gmc-recipe\" id=\"gmc-print-3733\"
