Galette des rois with frangipane cream"},"content":{"rendered":"<p>I recently wrote that the galette des rois is the traditional cake for the Epiphany in France and is eaten throughout January (read my <a title=\"Galettes des rois from France (2014)\" href=\"http:\/\/www.roadtopastry.com\/blog\/pastry-culture\/galettes-des-rois-from-france-2014\">previous article<\/a> to find out what a galette is, and what&#8217;s the tradition behind it).<\/p>\n<p>It is made of a <strong>crunchy puff pastry<\/strong> exterior with a <strong>creamy filling<\/strong> (usually the predominant flavour is almond) and whoever finds the small &#8220;<strong>f\u00e8ve<\/strong>&#8221; (a small sculpture hidden inside the cake) becomes &#8220;king\/queen for a day&#8221;.<\/p>\n<p>Last year I mademy <strong>first attempt<\/strong> at making a <strong>galette des rois<\/strong>, and although the result was <strong>tasty<\/strong>, the appearance was, well&#8230; <a title=\"Galette des rois\" href=\"http:\/\/www.roadtopastry.com\/blog\/pastry-experiments\/galette-des-rois\">have a look here<\/a>.<\/p>\n<p>So this year it was a <strong>great satisfaction<\/strong> to come out with something much <strong>nicer<\/strong>!!!<\/p>\n<p><a href=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Galette-des-rois-Step-162.jpg\"><img loading=\"lazy\" decoding=\"async\" <strong>step-by-step<\/strong> <strong>recipe<\/strong> of galette des rois on the blog, I chose to go <strong>traditional<\/strong> and I opted for a <strong>filling <\/strong>of <strong>frangipane<\/strong> <strong>cream<\/strong>, a delicate mix of <strong>almond cream and pastry cream<\/strong>.<\/p>\n<p><a the <a href=\"http:\/\/www.roadtopastry.com\/blog\/recipes\/laminated-doughs\/puff-pastry-pate-feuilletee\">puff pastry<\/a> myself, but <em>you can buy a ready-made one at the supermarket<\/em> (just be aware that it will never be as good as mine!) \ud83d\ude42 and in that case making a galette becomes a <strong>super easy<\/strong> and quick job!<\/p>\n<p><a Remember that the scraps of puff pastry cannot be mixed together and rolled out for a high-rising product such as the galette.
