For this post, though, I <strong>tried to respect the traditional recipe<\/strong> as much as possible.<\/p>\n<p><a href=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Saint-Honore-Step-14.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2364\" alt=\"Recipe---Saint-Honore---Step-14\" src=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Saint-Honore-Step-14.jpg\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Saint-Honore-Step-14.jpg 640w, https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/Recipe-Saint-Honore-Step-14-300x200.jpg 300w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><\/p>\n<h3>What&#8217;s the story behind the Saint-Honor\u00e9?<\/h3>\n<p>This famous <strong>French g\u00e2teau<\/strong> was created in the 1800&#8217;s by a <strong>pastry chef named Chiboust<\/strong>, who had a <strong>shop in Rue Saint Honor\u00e9.<\/strong><\/p>\n<p>On a side note, a <strong>baker in 1202<\/strong> offered his <strong>money to build a chapel<\/strong> in Paris in honour of Saint Honor\u00e9: the chapel became one of the richest of the city and in 1400, the bakers of Paris established their <strong>guild <\/strong>in the church of &#8220;Saint Honoratus&#8221;, who is now the patron saint of bakers.<\/p>\n<h3>Techniques you need to master for a Saint Honor\u00e9<\/h3>\n<p>Oh, so you like the Saint-Honor\u00e9 and you would like to make it. I tried to <strong>optimize time<\/strong> as much as possible (I recognize there might be better methods):<\/p>\n<ol>\n<li><em>Puff pastry: you can even make it a few days in advance<\/em><\/li>\n<li><em>Make the choux pastry: you need to make it the same day<\/em><\/li>\n<li><em>Bake the cream puffs<\/em><\/li>\n<li><em>Bake the cake base (puff pastry + choux pastry)<\/em><\/li>\n<li><em>Prepare the pastry cream<\/em><\/li>\n<li><em>Chill a part of the pastry cream and keep the rest for the Chiboust cream<\/em><\/li>\n<li><em>Make the Italian meringue<\/em><\/li>\n<li><em>Prepare the caramel <\/em><\/li>\n<li><em>Fill the choux with the chilled pastry cream<\/em><\/li>\n<li><em>Glaze the cream puffs<\/em><\/li>\n<li><em>Glue the cream
