{"id":2155,"date":"2013-10-20T17:48:55","date_gmt":"2013-10-20T15:48:55","guid":{"rendered":"http:\/\/www.roadtopastry.com\/blog\/?p=2155"},"modified":"2013-10-20T18:40:15","modified_gmt":"2013-10-20T16:40:15","slug":"my-first-wedding-cakes-for-my-first-client","status":"publish","type":"post","link":"https:\/\/www.roadtopastry.com\/blog\/pastry-experiments\/my-first-wedding-cakes-for-my-first-client","title":{"rendered":"My first wedding cakes for my first client!"},"content":{"rendered":"<p>I know, I was absent from the blog in the past days, but I was utterly justified:\u00a0 I was <strong>working on an order<\/strong> from <strong>my very first client<\/strong> for <strong>her wedding<\/strong>!<\/p>\n<p><a href=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/IMG_6426.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2157\" alt=\"Me and wedding cakes\" src=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/IMG_6426.jpg\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/IMG_6426.jpg 640w, https:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/IMG_6426-300x200.jpg 300w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><\/p>\n<p>Two main pieces of information to analyze here:<\/p>\n<p>1) <strong>My first client<\/strong>: so apparently at work even people from other teams now know I &#8220;make cakes&#8221; and the word is spreading&#8230; \ud83d\ude1b<\/p>\n<p>2) <strong>Wedding<\/strong>: so not only was this my first chance to make a cake for somebody I didn&#8217;t really know, but it was also a challenging opportunity to make big wedding cakes for 60 people! I mean, the cakes for <em>somebody&#8217;s most important day<\/em>! :-O<\/p>\n<p>Of course I was<strong> totally stressed<\/strong> and the<strong> risk of failure<\/strong> was high: the <strong>storage, decoration, and transportation<\/strong> were very critical. And the planning of activities was not be neglected either.<\/p>\n<p>&nbsp;<\/p>\n<div id=\"attachment_2158\" style=\"width: 650px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/IMG_6408.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-2158\" class=\"size-full wp-image-2158\" alt=\"Who said I couldn't fit 2 huge cakes in my fridge? Then there wasn&#8217;t space for anything else, though&#8230;<\/p><\/div>\n<p>Moreover the field was totally new for me! Wedding cakes are totally different from normal cakes:<\/p>\n<ul>\n<li>First of all they are<strong> covered and decorated with sugar paste<\/strong>, which I had never used before<\/li>\n<li>Sugar paste <strong>cannot be refrigerated<\/strong>, so basically I could not use egg-based creams for the filling (which accounted for 99% of my recipes)<\/li>\n<li>Finally wedding cakes are <strong>tall and heavy<\/strong>, so they must be resistant and hold their shape at room temperature for hours<\/li>\n<\/ul>\n<p><a href=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/IMG_6423.jpg\"><img loading=\"lazy\" decoding=\"async\" alt=\"IMG_6423\" src=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/IMG_6423.jpg\" width=\"640\" height=\"427\" \/><\/a><\/p>\n<p>The order was for 2 chocolate and vanilla cakes for 60 people + 80 macarons (chocolate, coconut and salted caramel). Although I had started preparing some elements last Wednesday, I was eventually <strong>running late on Saturday<\/strong> afternoon! I had to simplify the decoration that I had in mind, in order to finish the cakes for the wedding dinner. I was a bit upset, but <strong>seeing the result of my work on the display was very rewarding<\/strong> in the end! \ud83d\ude42<\/p>\n<p><a href=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/IMG_6418.jpg\"><img loading=\"lazy\" decoding=\"async\" alt=\"Wedding cakes and macarons\" src=\"http:\/\/www.roadtopastry.com\/blog\/wp-content\/uploads\/IMG_6418.jpg\" width=\"640\" height=\"960\" \/><\/a><\/p>\n<p>Luckily enough I had <strong>my good friend Gillian<\/strong> who helped me for the transportation, we had a <strong>great teamwork!<\/strong> She is also my <em>official tester\/pilot customer<\/em> by the way! \ud83d\ude1b Forever thankful! \ud83d\ude42<\/p>\n<p>And finally, <strong>thanks to Claudine and Marie<\/strong> who <em>crazily<\/em> trusted me and gave me this great opportunity! \ud83d\ude42<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I know, I was absent from the blog in the past days, but I was utterly justified:\u00a0 I was working on an order from my very first client for her wedding!
