It is a <strong>stirred custard<\/strong> and its standard version requires the use of vanilla as flavouring.<\/p>\n<p>In a few words, the <strong>vanilla bean is infused in the hot milk<\/strong> which is used to <strong>temper a mixture of egg yolks<\/strong>, sugar and starch: the resulting mixture is put back on the heat until thickened.<\/p>\n<p>A small amount of <strong>starch is needed<\/strong> to thicken the cream: I used <strong>corn starch (Maizena)<\/strong> which is available practically everywhere. You can also use other starches like rice starch, but please <strong>don&#8217;t use flour<\/strong>: it might <strong>form lumps<\/strong> more easily, it is <strong>heavier<\/strong> and might leave a bad after taste.<\/p>\n<p><strong>Starch also protects the egg yolks from curdling<\/strong> so,\u00a0to exploit its thickening action, you can (and <strong>must<\/strong>!) <strong>boil the cream <\/strong>(trust me: raw starch is not good).<\/p>\n<p>Pastry cream is so <strong>famous<\/strong> because it is very versatile, <strong>can be flavoured with many ingredients <\/strong>(e.g. chocolate, liqueurs, spices, fruits, etc&#8230;) and can be <strong>used as a filling<\/strong> in many preparations: \u00e9clairs, choux, napoleons, tarts and pies&#8230;<\/p>\n<p>It is <strong>thick and rich<\/strong> (especially in cholesterol!) so a bit heavy, but you can just <strong>use it as a base for other creams<\/strong>. In particular:<\/p>\n<ul>\n<li>Pastry cream + whipped cream = <strong>Cr\u00e8me diplomate <\/strong>(e.g. for napoleons or tarts)<\/li>\n<li>Pastry cream + butter = <strong>Mousseline cream <\/strong>(e.g. for fraisiers)<\/li>\n<li>Pastry cream + Italian meringue = <strong>Cr\u00e8me Chiboust <\/strong>(e.g. for Saint-Honor\u00e9 cakes)<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<div class=\"gmc-recipe-subtitle\">Note<\/h3>    \t\t<ul>\n<li>Creams with <strong>milk and eggs<\/strong> are <strong>very perishable<\/strong> and must therefore always be <strong>stored in the fridge<\/strong> until use. The same applies to product that contain creams (e.g. tarts)<\/li>\n<li>As soon as a pastry cream is prepared, <strong>its temperature should drop\u00a0 to 1\u00b0-4\u00b0 C in the shortest amount of time<\/strong> to prevent bacteria from forming: for this reason, the <strong>optional steps 6 and 7<\/strong> provide a way to chill the cream in a fast way: spreading the cream on a thin layer in a plastic wrap will chill it quickly and will <strong>prevent a thick skin from forming<\/strong>.<\/li>\n<li>You must be <strong>careful<\/strong> when you mix the <strong>hot milk with eggs<\/strong>: at all times there is a <strong>risk of curdling<\/strong> <em>(you don't want scrambled eggs, do you?)<\/em>, so make sure you <strong>whisk vigorously<\/strong> and constantly.<\/li>\n<li>The <strong>milk<\/strong> should come to a <strong>boil<\/strong> relatively <strong>slowly<\/strong>: it is important to let the <strong>vanilla bean infuse<\/strong>, so the longer the time, <strong>the stronger the flavour<\/strong>. The \"<strong>black dots<\/strong>\" (vanilla seeds) you find in commercial products are always <strong>a sign of quality<\/strong>, meaning that <strong>real vanilla was used<\/strong> and not artificial flavourings.<\/li>\n<li>Of course this is only the recipe of the <strong>standard pastry cream with vanilla<\/strong>, but <strong>you can use other flavours<\/strong> according to your taste: dark, milk or white chocolate, coffee, tea, ginger, pistachios, liqueurs, etc...<\/li>\n<\/ul>\n<\/div>                \n\n<\/div>\n\n    \n","protected":false},"excerpt":{"rendered":"<p>The queen of all creams is pastry cream.
